Weekend Update

Good morning! I hope you all had a great weekend! Here’s a bit of what we’ve been up to over the past week or so.

Home Projects & Updates

Although we didn’t get walls on the second story at the new build, we did get floor trusses for the second story/first floor ceiling! It already looks so different on site!

All of the trusses were delivered too. Word on the street is they had to ask cars to move in order to get these through our fairly narrow, dead-end street.

They also added all the beams to build the carriage house balcony that extends over the garage in the front of the house.

I love this view looking out our future front door! We’ll have 12′ ceilings on our main floor again, like we do now. So the door opening actually consists of a transom above the door, with the door in the center and then sidelights on each side. The scale of everything is so hard to tell at this point and I feel like won’t change much until the sheetrock goes up (and ultimately furniture goes in).

Once they added the plywood to the “floors” upstairs, Kurtis hiked up the ladder while I stayed on solid ground. He FaceTimed me the view from his new office. It all looks so different now and we’re excited to see how it progresses over the next week or so.

Here’s the view he sent me from what he thinks will be his office. I’ll spare you my face squinting at the screen in the sun from the real FaceTime screenshot 😉 Needless to say, we were really excited to see more water than we had initially expected. We love all the trees but the water was a fun surprise.

And this was looking off toward the front and side. Similar to our street now, they won’t be developing the land across the street from us. So, although we won’t have the pond we love so much, we’ll at least have lots of trees and greenery!

I’ve said it for three weeks now, so surely I’m about to be right. But I think this is the week we’ll get walls on the second floor. Although honestly at this rate, who knows. Ha!

Around Town & For Fun

Kurtis was in Denver the first half of the week for work, so it was pretty uneventful for the most part for me!

Our friends Chris and Rachel officially moved into their new home on Tuesday so I joined them for dinner and dropped off a housewarming gift. It’s honestly so weird they’ve moved now (thankfully only a street away). But more so to see the house with furniture in it, after stalking it empty for nearly nine months now! As I was leaving, I saw the strawberry moon.

I found Hawkeye watching Henley sleeping on Baby while I was at my desk working one day.

Once Kurtis was back in town, we hit the pool for lunch one afternoon and spent most of the time in the water because it has been so hot lately! We also went to Amigos for dinner both Thursday (just us) and Friday (with friends). Thankfully they have a pretty large menu 😉

The blue flowers on my front porch topiary came back with a vengeance this past week! The blooms had previously all fallen off, but I’m happy to report it looks like it will keep generating them for the summer! I may actually have to trim it all back at some point because it’s starting to grow a bit unruly! I actually just looked back at this post and am laughing now at how crazy it has gotten. Definitely time for a haircut!

We’ve talked about getting a portable pizza oven for years (even back when we lived in Omaha)! The Ooni was the first brand that caught our eye, but we still weren’t 100% sure we wanted to invest in something that expensive without knowing how much we’d use it. So, I finally decided to buy this pizza oven a few weeks back and we finally had some time to play around with it this weekend. It was significantly more affordable than the Ooni and had nearly perfect reviews so figured we’d try it. It has a bit of a learning curve but it was actually a lot of fun to try and figure out.

Our first pizza was good but also kind of a disaster. We realized the pellets had run out because we were moving pretty slowly trying to figure everything out. So we added more but it made so much smoke and that’s basically all we could taste (the pizza basically tasted like beef jerky)! The dough was also significantly undercooked in relation to the toppings. So, we tried another one that night, and it was so much better.

Yesterday, we tried all new pizza crusts. We’ve also quickly learned that pre-shredded cheese basically ignites and chars immediately so we need to pre-shred our own. The fresh mozzarella slices work so well! We also realized the ultra thin crusts burn too quickly (shown in the top left below).

It’s so wild you can cook an entire pizza in under two minutes! And once you get the hang of it, they taste like your favorite woodfired pizzas from restaurants! I’m not sure we’ve ever made homemade pizza before (unless you count all the Jack’s frozen pizzas we baked in our early years of marriage). So I’m excited to play around with dough (would love to use my sourdough starter excess), sauces (we only worked with Rao’s this past week for consistency and really liked it) and toppings!

I also bought this tabletop mini Solo stove that is perfect for making S’Mores. We hadn’t used it yet, and in the middle of watching a show last night, Kurtis said he was craving one. So we broke it out and roasted them. They were so good and this little kit feels so much less messy than starting up a firepit or other means to make one.

Kurtis doesn’t travel again now until we both head back to Omaha in mid-July to see his family and our friends. So, we’re both looking forward to getting back into a routine and enjoying summer over the next month or so before his travel picks up again!
