These quick & easy Canadian bacon and egg bites are perfect for when you are hosting or really anytime you want a delicious breakfast!

It’s hard to believe summer unofficially kicks off this weekend! And I couldn’t be more excited about it!

Today I’m teaming up with the Styled + Set Entertaining crew, hosted by Lory from Designthusiasm, to bring you some amazing tips for your summer entertaining plans. Typically, I share a tablescape for this quarterly post, but with a few other tablescapes I have already posted and have coming up, I thought I’d share a super quick and easy Canadian bacon and egg bites recipe that works well when you are hosting guests this summer.

This is seriously one of the easiest breakfasts you can ever make. And it’s Keto and low-carb friendly, plus everyone from men to women to kids seem to love it! Here are all the ingredients: literally just Canadian bacon and eggs and non-stick cooking spray. Preheat your oven to 350 degrees as you set out your ingredients.

You only need a muffin tin in terms of “supplies”. Spray the tin with Pam or other non-stick spray. Then, layer 2-3 pieces of delicious Canadian bacon into each muffin hole. We used to only use two pieces per serving, but we’ve since upped it to three pieces, as we’ve found the eggs don’t leak as easily this way. If you’re Canadian bacon is sliced thicker (like this pack I got from Target), you may have to be gentle folding them into place. I’ve also bought some from Costco that are a bit thinner, so you don’t have to worry as much about them cracking. Either way, you should be fine as long as you layer the crack where it meets another pieces of Canadian bacon.

Once the Canadian bacon is set (you can actually use every hole or space out if you don’t need to serve as many), crack an egg over each set.

Next, place the tray in the oven. You’ll cook as long as you prefer the eggs to be cooked. You can easily judge by looking at it, as you would if you were cooking them in a skillet on the stove. I cooked these about 18 minutes because I don’t love runny yolks.

Serve with your favorite sides such as fresh greens and sweet berries! You could also top with shredded cheese for an additional topping or adding sauteed vegetables to the egg mix. There are so many different ways you could serve this easy yummy dish! The great thing is, if you have any left over, you can store them in the fridge and then heat them up in the microwave. I’ve found they’re still good for a few days.

Ingredients

  • Eggs
  • Canadian Bacon
  • Non-Stick Spray

Instructions

  • Pre-heat oven to 350 degrees
  • Layer 2-3 pieces of canadian Bacon in a muffin tin
  • Crack one egg over each set of Canadian bacon
  • Bake for 15-18 minutes, based upon preferred egg yolk runniness
  • Serve and enjoy!

And, the finished product! The ingredients basically merge together to almost form a flower like shape when you use three pieces of Canadian bacon. And they’re so delicious!

I’ll be sharing this full tablescape next week along with some other easy and fun entertaining ideas. Basically I’m obsessed with this tablecloth. It’s the first time I’ve used one on this table and this one couldn’t be cuter. It definitely makes the food look even better – and makes me much less nervous when serving food on such porous wood!
