9large potatoes {or 5 lbs}cooked, peeled and drained
6ozpackage of cream cheese (I typically use the full 8 oz block)softened
1cupsour cream
2tsponion salt
1tspsalt
1/4tsppepper
2Tbspbutter
Instructions
Boil potatoes in a large pot until soft.
Mash potatoes until smooth; combine with remaining ingredients in a large mixing bowl.
Beat until light and fluffy.
Cool, cover and refrigerate if not serving immediately.
Use within 2 weeks.
To serve, place desired amount in a greased casserole pan, dot with butter and bake at 350 degrees for 30 minutes or until heated through. OR Use crockpot to reheat (our preferred method). You can also microwave small batches until warm prior to placing in crockpot if you are short on time.
